Koftas are fried dumpling balls. They are made up of mashed potatoes, mix vegetables and paneer with the stuffing of malaai. Today we are ready to share the recipe of vegetable koftas which are slightly crunchy from outside and very soft from inside with delicious and rich gravy. INGREDIENTS
For Kofta
ü  Potato -250g
ü  Carrot -100g
ü  Peas-100g(optional)
ü  Cheese-200g
ü  Ginger-1/2 inch
ü  Green chilli-3 or 4
ü  Powder of garam masaala -1 spoon
ü   Cream(Malaai)-100g
ü   Maida-1 cup
ü  Salt- as per taste
ü  Oil- For frying
For Gravy
ü  Tomatoes- 2 large
ü  Onion- 2 large
ü  Cashew-50g
ü  Garlic- 5-6 cloves
ü  Ginger-1/2 inch
ü  Red Chilli powder-1 teaspoon
ü  Turmeric-1/2 teaspoon
ü  Coriander powder-1 teaspoon
ü  Oil – 2 tablespoon
ü  Salt-as per taste
ü  Water-4 cup
Method
For kofta
·         Boil potatoes, peas and carrots together. After boiling mash the vegetables properly. Now add cheese in the vegetables.
·         Mix ginger, green chilli, amchoor powder, salt and powder of garam masaala too.
·         Give flattened shape lightly by hand and create balls with a little cream in the middle.
·         Coated all the koftas in flour and deep fry them.
Now it’s time to make gravy for our koftas. So let’s start...
  For gravy
·         Make tomato, onion, ginger and garlic paste. Make cashew paste separately with a little water.
·         Heat the oil in the cooker and add onion, ginger and garlic paste and fry it on a low flame. When the paste is starts changing its colour add red chili powder, turmeric powder, coriander powder and salt in it.
·         When the paste started leaving the oil, put cashew paste in it and cook it for three to four minutes.
·         After this, add four cups of lukewarm water and put the lid on the pressure cooker.
·         Cook the gravy until it gets a whistle.

·         Carefully put Koftas in the gravy and garnish with green coriander.
